This is a recipe from Donna Hay which is really really good!
what you need
- 2x 250 gr chicken breast fillets
- 1/4 cup chopped basil leaves
- 2 tablespoons lemon zest
- 2 gloves crushed garlic
- 1/4 cup olive oil
- 2 zucchini, sliced lengthwise
- 250 gr cherry tomatoes
- for serving; 1/4 cup basil leaves, lemon wedges
Preheat the oven to 220C. Put the basil, lemon zest, garlic and oil in a bowl and stir to combine.
Place the zucchini in a backing tray and put the chicken on top. Spoon over the basil mixture.
Roast for 15 minutes.
Add the tomatoes and roast for a further 10 minutes or until the chicken is cooked through.
Top with the basil leaves and lemon wedges.
Well.. You might have noticed putting up my week menu every week isn’t happening..

home made plantain chips
what you need
- green plantains
- oil (can be coconut, corn or olive oil)
- sea salt
- garlic powder
Peel the plantain and slice it in thin pieces.
Toss the pieces with some sea salt ALS garlic powder to taste.
Heat up oil (fill up the bottom of a pan) and fry the plantain slices until golden brown
Well, as you might have noticed (or not) last week I didn’t put up a week menu.
Why? well, if you follow me on instagram you might have seen i was on a holiday in Jamaica.
We had a blast.. needed some sun
At the end of December i saw this post at Beginspiration.
There was a change to win a Dopper, something which i’ve never heard about before.
